做法:春笋切成片后加少许盐捞(lāo )出(chū )后用清水浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒(chǎo )1分钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清(qīng )水半掩(yǎn )住春笋,盖(gài )上锅盖大火煮开(kāi )后转中(zhōng )火。煮到(dào )水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时(shí )盖(gài )上锅盖焖。
