做法:春笋切(qiē )成片后(hòu )加少(shǎo )许盐捞出后用清水浸(jìn )泡,生姜(jiāng )切片,葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩(yǎn )住春(chūn )笋,盖上(shàng )锅盖大火(huǒ )煮开后(hòu )转中(zhōng )火(huǒ )。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
