做法:春笋切成片后加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入(rù )生姜(jiāng )、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入(rù )少(shǎo )量清水半掩(yǎn )住春笋,盖上锅盖(gài )大火煮开后(hòu )转中(zhōng )火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
