做法:春笋切成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切(qiē )片(piàn ),葱切(qiē )成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片(piàn )、葱(cōng )段(duàn )翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加(jiā )入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水(shuǐ )快(kuài )熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖(gài )焖。
