做法(fǎ ):春笋切成片(piàn )后加少许盐捞(lāo )出后用清水浸泡,生姜切片,葱切成段(duàn )。锅(guō )烧热,倒入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻(fān )炒(chǎo )均匀,加(jiā )入少(shǎo )量清水半掩住春笋,盖(gài )上(shàng )锅盖大(dà )火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上(shàng )锅盖(gài )焖。
