做法:春(chūn )笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩(yǎn )住春笋(sǔn ),盖(gài )上锅盖(gài )大火煮开后转(zhuǎn )中火。煮到(dào )水快熬干的时(shí )候加(jiā )入盐,翻炒(chǎo )均匀稍收(shōu )汁时盖上锅(guō )盖焖。
