做法:春(chūn )笋切成片后加(jiā )少许盐捞出后用清(qīng )水浸泡,生姜切片(piàn ),葱切成段(duàn )。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀(yún ),加(jiā )入少量清水半掩(yǎn )住春笋,盖上锅盖(gài )大火煮开后(hòu )转(zhuǎn )中火。煮(zhǔ )到(dào )水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
