做法:春笋切(qiē )成片后加少许(xǔ )盐(yán )捞出(chū )后(hòu )用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半掩住春笋,盖上锅(guō )盖大(dà )火煮开后转中火。煮到水快熬干的(de )时(shí )候(hòu )加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖(gài )焖(mèn )。
