做法(fǎ ):春笋切成片后加(jiā )少许盐(yán )捞出(chū )后用清水浸泡(pào ),生姜切片,葱(cōng )切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝油(yóu )翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大(dà )火煮开(kāi )后转中火。煮到水快熬干的时候加入盐(yán ),翻炒均(jun1 )匀稍收汁时盖上(shàng )锅盖(gài )焖。
