做法(fǎ ):春笋切成片后加少许盐(yán )捞出后用清水浸泡,生(shēng )姜切片(piàn ),葱(cōng )切(qiē )成段。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖上锅(guō )盖(gài )大(dà )火煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
