做法:春笋切(qiē )成片后(hòu )加少许(xǔ )盐捞出后用清水浸(jìn )泡(pào ),生姜切片,葱切成段。锅烧(shāo )热(rè ),倒入2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水半(bàn )掩住(zhù )春笋,盖上锅(guō )盖(gài )大(dà )火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖(gài )上锅盖焖。
