做法:春(chūn )笋切成片后加少许盐(yán )捞出(chū )后用清水浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝(háo )油翻炒均匀,加入(rù )少(shǎo )量清水半掩(yǎn )住春(chūn )笋,盖上锅盖大(dà )火煮开后转中火。煮到水快熬(áo )干的时候加入盐,翻炒(chǎo )均匀(yún )稍收汁时盖上锅盖焖。
