做法:春笋(sǔn )切成片后加少许盐捞出(chū )后用清水浸泡(pào ),生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放(fàng )入(rù )生姜、春(chūn )笋、牛肉片、葱段翻炒1分(fèn )钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住(zhù )春笋,盖上锅盖大火煮开后(hòu )转中火。煮到(dào )水快熬干的时候加入盐,翻(fān )炒均匀稍(shāo )收汁时盖上锅盖焖。
