做法:春笋(sǔn )切成片后加少许盐(yán )捞出后用清(qīng )水浸(jìn )泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛(niú )肉片、葱段翻炒1分钟左右(yòu )。再加入生(shēng )抽、老(lǎo )抽(chōu )、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住(zhù )春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火(huǒ )。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅(guō )盖焖。
