做法:春笋(sǔn )切(qiē )成(chéng )片(piàn )后加少许盐捞出后用清(qīng )水浸泡(pào ),生姜切(qiē )片,葱切成段。锅(guō )烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入(rù )少(shǎo )量清水半掩住春笋,盖上锅(guō )盖大火(huǒ )煮开后转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁(zhī )时盖上(shàng )锅盖焖。
