做(zuò )法:春笋切(qiē )成片后加(jiā )少许盐捞(lāo )出后用清水浸泡,生姜(jiāng )切(qiē )片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入少量清水半(bàn )掩(yǎn )住(zhù )春笋,盖上锅盖大火煮开后转中火(huǒ )。煮(zhǔ )到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
