做法:春笋切成片后加(jiā )少许盐捞出后用清水浸(jìn )泡(pào ),生姜切片,葱切成段。锅(guō )烧热,倒入2勺油(yóu ),放入生姜、春(chūn )笋、牛(niú )肉片、葱段翻炒1分(fèn )钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒(chǎo )均匀,加入少量清(qīng )水半掩住春(chūn )笋,盖上锅盖大火煮开(kāi )后转中(zhōng )火。煮到水快熬干的时候(hòu )加入盐,翻(fān )炒均匀(yún )稍收汁(zhī )时盖上(shàng )锅盖焖。
