做法(fǎ ):春(chūn )笋切成片后(hòu )加少许盐捞出后用清(qīng )水浸泡(pào ),生姜切片(piàn ),葱(cōng )切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生(shēng )姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水半掩住春笋(sǔn ),盖上锅盖(gài )大火煮开后转中火。煮到(dào )水(shuǐ )快熬(áo )干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅(guō )盖(gài )焖。
