做法:春笋(sǔn )切成片后加少许(xǔ )盐捞出(chū )后用清水浸泡(pào ),生姜切片,葱切(qiē )成段。锅烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清水(shuǐ )半掩(yǎn )住春笋,盖上锅盖(gài )大火(huǒ )煮开后转中火(huǒ )。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
