做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春(chūn )笋,盖上锅盖大火(huǒ )煮(zhǔ )开(kāi )后转中火(huǒ )。煮到(dào )水(shuǐ )快(kuài )熬干的时候(hòu )加入盐,翻炒均匀稍(shāo )收(shōu )汁时盖上锅(guō )盖焖。
