做法:春笋切成片后加(jiā )少(shǎo )许盐(yán )捞出后用清水浸泡,生姜切(qiē )片,葱(cōng )切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒(chǎo )1分钟左右。再加(jiā )入生(shēng )抽(chōu )、老抽、蚝油(yóu )翻炒均(jun1 )匀,加入少(shǎo )量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
