做法:春(chūn )笋切成片后(hòu )加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分钟左(zuǒ )右。再(zài )加入生(shēng )抽、老抽、蚝油翻炒均(jun1 )匀,加入(rù )少量清水半(bàn )掩(yǎn )住春笋,盖(gài )上(shàng )锅盖大火煮(zhǔ )开后转中(zhōng )火(huǒ )。煮到水快熬(áo )干(gàn )的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅(guō )盖焖。
