做法:春(chūn )笋(sǔn )切成片后加少许盐捞出后(hòu )用清水浸(jìn )泡,生姜(jiāng )切片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半掩住(zhù )春笋,盖上(shàng )锅盖大火煮开后转中火(huǒ )。煮到(dào )水快熬干的(de )时候加入盐,翻炒均匀稍收汁(zhī )时盖上(shàng )锅盖焖。
