做法:春笋切成片后加少(shǎo )许盐(yán )捞出后用清(qīng )水(shuǐ )浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春(chūn )笋、牛肉片、葱段翻炒1分(fèn )钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油(yóu )翻炒均匀,加入少量清(qīng )水半掩(yǎn )住(zhù )春笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的(de )时候加入盐(yán ),翻炒均匀稍收(shōu )汁时盖上锅(guō )盖焖。
