做法:春笋切成片后加少许盐捞出后用清(qīng )水浸泡,生(shēng )姜切片(piàn ),葱切(qiē )成段。锅烧热,倒入(rù )2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量(liàng )清(qīng )水(shuǐ )半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水快熬干的(de )时候加(jiā )入盐,翻炒均(jun1 )匀稍收汁时(shí )盖上锅盖(gài )焖。
