做(zuò )法:春(chūn )笋切成片后加少许(xǔ )盐捞(lāo )出后(hòu )用清水浸泡,生(shēng )姜切片,葱切成段(duàn )。锅(guō )烧热(rè ),倒入2勺油,放入(rù )生姜、春笋、牛肉片(piàn )、葱(cōng )段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖(gài )上锅盖大火煮(zhǔ )开后转(zhuǎn )中火。煮到水快熬干的时候加入盐(yán ),翻炒均(jun1 )匀稍收(shōu )汁时盖上锅盖焖。
