做法:春笋切成片后加少(shǎo )许盐捞(lāo )出后用清水浸泡,生姜(jiāng )切片,葱切成(chéng )段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再(zài )加入生(shēng )抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入少量清水半(bàn )掩住春笋,盖上(shàng )锅盖大(dà )火煮开后转中火(huǒ )。煮到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖(gài )焖。
