做法:春笋切成片后(hòu )加(jiā )少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜(jiāng )、春(chūn )笋、牛肉片、葱段翻(fān )炒1分钟左(zuǒ )右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋,盖上锅(guō )盖大(dà )火煮开(kāi )后转中火(huǒ )。煮(zhǔ )到水快熬干的时候(hòu )加入盐(yán ),翻炒均匀稍收汁(zhī )时盖上(shàng )锅盖焖。
