做法:春笋切成片后加少许(xǔ )盐捞出后用(yòng )清水(shuǐ )浸(jìn )泡,生姜切片,葱切成段(duàn )。锅烧热,倒入(rù )2勺油,放入生(shēng )姜、春笋、牛肉(ròu )片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋,盖(gài )上(shàng )锅盖大火煮(zhǔ )开(kāi )后转中(zhōng )火。煮到(dào )水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
