做法:春笋切成片(piàn )后加少许盐捞(lāo )出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生(shēng )姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住(zhù )春笋,盖上锅(guō )盖大火煮开(kāi )后(hòu )转中火(huǒ )。煮到水快熬干的时(shí )候加入盐,翻炒均匀(yún )稍收汁时(shí )盖上锅(guō )盖焖。
