做(zuò )法:春笋切成片后加少许盐捞出后用(yòng )清(qīng )水浸(jìn )泡,生(shēng )姜(jiāng )切(qiē )片,葱切成(chéng )段。锅烧热(rè ),倒(dǎo )入2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春(chūn )笋,盖上锅盖(gài )大火煮开(kāi )后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
