做法:春笋切成片后加少许盐捞(lāo )出(chū )后用清(qīng )水浸泡,生姜切(qiē )片,葱切成段(duàn )。锅烧热,倒(dǎo )入2勺油,放入(rù )生姜、春笋、牛肉片(piàn )、葱(cōng )段翻(fān )炒1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油翻(fān )炒均(jun1 )匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖(gài )大火煮(zhǔ )开后(hòu )转中(zhōng )火。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
