做法:春笋切成片后(hòu )加少许盐捞出后用清水(shuǐ )浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加(jiā )入(rù )生抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加入少(shǎo )量清水半(bàn )掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入(rù )盐,翻(fān )炒均(jun1 )匀稍收汁时(shí )盖(gài )上锅(guō )盖焖。
