做法(fǎ ):春笋(sǔn )切成(chéng )片后加少许盐捞出后用清(qīng )水浸泡,生姜切(qiē )片,葱切成(chéng )段。锅(guō )烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛(niú )肉片、葱(cōng )段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上锅盖大火煮开(kāi )后转(zhuǎn )中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀(yún )稍收(shōu )汁时盖上(shàng )锅盖(gài )焖。
