做法:春笋切成片(piàn )后加少许盐捞出后用清(qīng )水浸泡,生(shēng )姜(jiāng )切片,葱切成(chéng )段。锅烧(shāo )热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝(háo )油(yóu )翻炒均匀(yún ),加(jiā )入少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后(hòu )转中火。煮到水快熬(áo )干的时候加(jiā )入盐(yán ),翻炒均匀稍收汁时盖上锅(guō )盖焖(mèn )。
