做(zuò )法:春笋(sǔn )切(qiē )成(chéng )片后加少许(xǔ )盐(yán )捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒1分钟左右。再(zài )加入生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火(huǒ )。煮到水快(kuài )熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
