做法:春笋切成片后加(jiā )少许盐捞出后用清水浸泡,生(shēng )姜切片,葱(cōng )切成(chéng )段。锅(guō )烧(shāo )热,倒入2勺(sháo )油,放入(rù )生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩(yǎn )住(zhù )春笋,盖(gài )上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的(de )时候加(jiā )入盐,翻炒均匀(yún )稍收汁时(shí )盖上锅盖焖。
