做法:春笋切成片后加少许盐(yán )捞(lāo )出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段(duàn )。锅烧热,倒入(rù )2勺油,放入生姜(jiāng )、春笋、牛(niú )肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀(yún ),加(jiā )入少量清水半掩住春笋,盖上锅盖(gài )大火煮开(kāi )后转中火。煮(zhǔ )到水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁(zhī )时(shí )盖上锅盖(gài )焖。
