做法:春笋(sǔn )切成片后加少许盐捞出后用(yòng )清(qīng )水浸泡,生姜(jiāng )切片(piàn ),葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均(jun1 )匀,加(jiā )入少量清水(shuǐ )半(bàn )掩住(zhù )春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
