做法:春笋(sǔn )切成(chéng )片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段(duàn )。锅(guō )烧(shāo )热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再(zài )加入(rù )生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加入少(shǎo )量清水半(bàn )掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮(zhǔ )到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖焖。
