做(zuò )法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生(shēng )姜切片(piàn ),葱切成(chéng )段。锅(guō )烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入少量清水半掩住春笋,盖(gài )上锅(guō )盖大(dà )火煮(zhǔ )开后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
