做法:春笋切成片后加少许盐(yán )捞出后用(yòng )清(qīng )水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到(dào )水(shuǐ )快熬(áo )干的(de )时候(hòu )加(jiā )入盐,翻炒均匀(yún )稍收汁(zhī )时盖上锅盖焖。
