做法:春(chūn )笋切成片后加(jiā )少许盐捞出后用清水(shuǐ )浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片(piàn )、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝(háo )油翻炒均匀(yún ),加入少量清水半(bàn )掩住春(chūn )笋,盖上锅(guō )盖大火煮开后转中火。煮到水快熬干的时(shí )候加入盐(yán ),翻炒均匀稍收(shōu )汁时盖上锅盖焖。
