做法:春笋切成片后加(jiā )少许盐捞出后用(yòng )清(qīng )水浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉(ròu )片、葱段翻炒1分(fèn )钟(zhōng )左右。再(zài )加入(rù )生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖(gài )大(dà )火煮开(kāi )后转(zhuǎn )中(zhōng )火。煮到水快熬干的时候加(jiā )入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
