做法:春笋切成片后加少许盐捞(lāo )出后用(yòng )清水(shuǐ )浸(jìn )泡,生姜(jiāng )切片,葱切成段(duàn )。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右(yòu )。再(zài )加入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加(jiā )入(rù )少(shǎo )量清水(shuǐ )半掩住春笋(sǔn ),盖(gài )上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
