做法:春笋切(qiē )成片后加(jiā )少许(xǔ )盐捞出(chū )后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热(rè ),倒入2勺油,放入(rù )生姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分(fèn )钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住(zhù )春笋,盖(gài )上(shàng )锅盖大火煮(zhǔ )开(kāi )后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
