做(zuò )法(fǎ ):春笋切成片后加少(shǎo )许盐捞出后(hòu )用清(qīng )水浸泡(pào ),生(shēng )姜切片,葱切成段。锅烧热,倒入(rù )2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅(guō )盖大火煮(zhǔ )开后转中火。煮到水快熬干的(de )时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
