做法:春(chūn )笋切成片后加少许盐捞出后用(yòng )清水浸(jìn )泡,生姜切片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入(rù )生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩住(zhù )春笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮到水(shuǐ )快熬(áo )干的时候加入盐,翻炒(chǎo )均匀(yún )稍收汁时盖上锅盖焖。
