做(zuò )法:春笋切成片后加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油(yóu )翻(fān )炒均匀,加(jiā )入少量清水半掩(yǎn )住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬(áo )干的(de )时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖(gài )焖。
