做(zuò )法:春笋切成(chéng )片后加少许盐捞出后用(yòng )清(qīng )水浸泡,生姜(jiāng )切片,葱(cōng )切成段(duàn )。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱(cōng )段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到(dào )水快熬干的时候加入(rù )盐(yán ),翻炒均(jun1 )匀(yún )稍收汁(zhī )时盖上锅盖焖。
